Chinennahally Estate – India
Chinennahally Estate is a family-run farm located on the slopes of the Bababudangiri mountain range in the Chikmagalur region of Karnataka state. This coffee from India arrives in San Agustín as an origin that expands our map to include a less visible coffee-growing tradition with over four centuries of history. The property has remained in the hands of the same family for more than 70 years and cultivates coffee using a traditional double-shade system, utilizing various native tree species that promote biodiversity and balanced cherry ripening.
This lot corresponds to the Plantation AA classification, one of the traditional categories of washed Arabica coffees from India, which identifies larger beans carefully selected for preparation and export.
Varietal S795
The S795 variety is a hybrid developed in India from a cross between the Kent and S288 varieties. It was selected for its resistance to coffee rust and its good adaptation to the high-altitude, shaded conditions of the Western Ghats. It produces a clean, medium-bodied cup with smooth notes, characteristic of quality Indian Arabicas.
Chikmagalur
The Chikmagalur region is considered the birthplace of coffee in India. According to tradition, it was here that the Sufi saint Baba Budan introduced the first coffee seeds from Yemen in the 17th century, giving rise to the country's coffee industry. Its plantations thrive in the Western Ghats mountains, one of the most biodiverse areas in the world, where the combination of altitude, abundant rainfall, and native forests provides ideal conditions for cultivating high-quality Arabica coffee under shade.
Prosecution
The ripe cherries are hand-picked and carefully selected before pulping. Afterward, the coffee from Chinennahally Estate ferments to remove the mucilage, is washed with clean water, and is finally sun-dried in parchment until it reaches the ideal moisture content for preservation.
