Description
Yirgacheffe Kochere Gr.2 - Ethiopia
Yirgacheffe Kochere Gr.2 is a coffee from Ethiopia, from the Kochere district, within the Yirgacheffe coffee-growing area, in the Gedeo Zone, in the south
of the country. The crop is grown at around 2,000 m a.s.l., in a mountain setting with fertile soils and a mild climate with seasonal rains, conditions that lengthen the ripening period of the cherry. It is the 2025/2026 harvest and is presented with the Gr.2 preparation
Origin and cultivation
Behind the lot there are small producers: around 600 families who deliver their cherry to a washing station owned by Germa.K, which
supplements its permanent staff with temporary workers during the harvest months. The plots are family-run and managed according to traditional agroforestry systems, with the coffee tree growing in the shade of native trees and Heirloom varieties of arabica. Management follows organic practices typical of the area, without certification. Alongside the coffee grows Ensete ventricosum, the so-called false banana, from which many families make kocho, a staple food in southern Ethiopia and an additional source of income. This coexistence of crops sustains the biodiversity of the plots
Process
The lot is washed. Picking is selective and the cherry goes through flotation sorting, which removes the lower-density fruit before pulping. Pulping takes place on the same day the coffee arrives at the station, followed by fermentation in water for 48 to 72 hours. Once fermentation is finished, the parchment is washed to remove the remaining mucilage and taken to raised African beds, where drying lasts between 10 and 13 days until it reaches the moisture level suitable for storage.
