Yirgacheffe Kochere Gr.2 – Ethiopia

Yirgacheffe Kochere Gr.2 is a coffee from Ethiopia originating from the Kochere district, within the Yirgacheffe coffee region, in the Gedeo area, south
of the country. The crop is located at around 2,000 meters above sea level, in a mountainous environment with fertile soils and a temperate climate with seasonal rains, conditions that lengthen the cherry ripening period. It corresponds to the 2025/2026 harvest and is presented with Gr.2 preparation.

Origin and cultivation

Behind the plot are small producers: around 600 families who deliver their cherries to a washing station owned by Germa.K, which
The farm supplements its permanent staff with temporary workers during the harvest season. The plots are family-owned and managed according to traditional agroforestry systems, with coffee plants growing in the shade of native trees and heirloom Arabica varieties. Management follows local organic practices, without formal certification. Alongside the coffee, Ensete ventricosum, the so-called false banana, grows, which many families use to make kocho, a staple food in southern Ethiopia and an additional source of income. This coexistence of crops supports the biodiversity of the plots.

Process

The batch is washed. Harvesting is done selectively, and the cherries undergo flotation sorting, which separates the less dense fruit before pulping. Pulping is carried out on the same day the coffee arrives at the station, followed by a 48- to 72-hour water fermentation. Once fermentation is complete, the parchment is washed to remove any remaining mucilage and then placed on raised African drying beds, where drying lasts between 10 and 13 days until it reaches the appropriate moisture content for storage.
