The Ranch – Colombia «Navel»
El Rancho – Colombia “Ombligón” coffee is the result of the work of the Cadefihuila coffee growers association, which has managed this farm as a space for innovation and collaboration since 2013. Located in the department of Huila, the farm has become a center for experimenting with specialty coffee processes, while maintaining close ties with producers in the region.
The Cadefihuila cooperative brings together more than 3,500 coffee growers spread across 28 municipalities in Huila. Most of them own between two and three hectares and work together as families at every stage of cultivation and processing: from selective harvesting to drying. This dedication guarantees traceability and consistency, giving El Rancho – Colombia “Ombligón” coffee its outstanding quality.
In recent years, the farm has focused on varieties such as Bourbon Rosé and Caturra, as well as purchasing coffees from other producers to utilize its processing facilities. This collaborative, community-based approach enriches the sensory profile and opens up space for experimenting with controlled fermentations and techniques that enhance cup complexity.
Prosecution
The cherries are harvested only at their optimal ripeness and undergo an initial screening in water to remove any floating fruit. The beans then undergo a double fermentation: first in bags for 36 hours, and then for another 36 hours submerged in mucilage prepared with a previous batch and fed with unrefined cane sugar for a month. After this process, they are washed twice and subjected to a thermal shock with water at 60°C, intensifying the aromatic expression. Finally, the coffee is dried in dehumidifiers until it reaches the ideal moisture content in five days, ensuring a clean, stable, and nuanced result.
