Region
The department of Huila is located in the southwest of the country, its capital is Neiva, located in the Andean region, it is a beautiful and major tourist attraction that has beautiful landscapes, hot springs and beautiful coffee mountains.
Huila coffee is characterized by sweet notes, good acidity and intense fragrance. Its cup profiles are derived from climatic and geographical factors of the region.
El Huila coffee is one of the most recognized regional coffees in Colombia for its year-round consistency in the cup, which is why it is so famous.
Process
The coffee is harvested every three weeks, collecting only the beans with the appropriate degree of ripeness. They are then placed in a floating tank where they are sorted by water. The ripe beans remain at the bottom and the lighter beans float. Here, these beans are separated from the mature beans, then pulped and fermented for 7 to 10 hours.
During the sun-drying process, the coffee farmer placed plastic over the coffee to prevent it from drying out too much.
The coffee is placed in a flotation tank before being manually sorted. Sub-optimal beans (green, dry, or brown) are then manually sorted.
It is pulped and sun-dried.
