Spring – Colombia

The La Primavera – Colombia farm is located in the upper part of the Bruselas district in Pitalito, Huila, one of the world's most renowned regions for its coffee quality. The combination of fertile soils, a microclimate with sunny days and cool nights, and a deep-rooted coffee-growing tradition make this place a benchmark in southern Colombia.

Nearly 25,000 trees are grown on its six hectares, including varieties such as Castillo, Caturra, Senicafé, and, most notably, Bourbon Rosado. The batch we present comes from the latter, carefully processed under a fermentation and washing protocol that seeks to highlight the identity of its origin.

Producer José Oliver Galíndez is a key figure in Huila coffee growing. He has been a pioneer in quality issues, one of the first cuppers in the department to train in the United States, and has participated as a judge in the Cup of Excellence competition. His curiosity has also led him to research new solutions in agricultural machinery to improve on-farm processing processes. All this knowledge translates into a rigorously crafted coffee, where experience meets innovation.

The process for this Rosé Bourbon begins with hand-picking cherries at their peak ripeness. The cherries are then left to ferment for 12 hours, followed by mucilage fermentation before a double wash that ensures cleanliness and clarity in the cup. Thanks to this care, the aromatic characteristics clearly express the influence of altitude, variety, and microclimate.
