El Rancho – Colombia “Pink Bourbon”
El Rancho – Colombia "Pink Bourbon" is a farm belonging to the Cadefihuila coffee growers' association, where specialty coffee projects have been developed for years. This space brings together people and knowledge, experimenting with different processes to enhance the quality of each lot. The farm has been owned by Cadefihuila since 2013, and for the past seven years, they have worked with varieties such as Bourbon Rosado and Caturra. Coffees are also purchased from other producers in the area to take advantage of the processing plant's infrastructure.
Cadefihuila is a cooperative made up of more than 3,500 members operating in 28 municipalities in the department of Huila. Most of its coffee growers own between two and three hectares, reinforcing the family nature of the crop. This model guarantees meticulous control at every stage: manual harvesting of ripe cherries, careful processing, and drying processes that preserve the integrity of the bean. Thanks to this, coffees like El Rancho – Colombia "Pink Bourbon" faithfully reflect the work of small families dedicated to detail and excellence.
Prosecution
Ripe cherries are hand-picked and submerged in water to separate the floating cherries. They are then fermented in bags for 36 hours. After this first step, the coffee is fermented again for another 36 hours in mucilage previously prepared with a previous batch, fed with panela for a month. Once this process is complete, the beans are rinsed twice and subjected to a single thermal shock with water at 60°C. Finally, the coffee is dried in dehumidifiers, reaching the optimal humidity in just five days to preserve the complexity of this unique Pink Bourbon.
