Finca Chambaku is the Restrepo family's newest project. It is a 12-hectare farm located in Villamaría, Caldas. It has traditionally been focused on coffee cultivation. traditional, but which in recent years has adapted and created an ideal agro-industrial system to extract its full productive potential with differentiated coffees.
Our team in Colombia saw great potential in this land for specialty coffee production thanks to the optimal environmental conditions and proximity to our facilities, allowing us to maintain exhaustive controls to guarantee the coffee's quality. Juan Felipe, Q Processor and partner of the farm, is the person in charge and the mastermind behind the protocols and the on-farm processing process behind the processed coffees.
HARVESTING AND FERMENTATION:
A lot selection process is carried out, prioritizing the location of the coffee tree within the farm, ensuring that it meets the temperature and humidity requirements for sugar development. After exhaustive harvesting, a floating process is carried out to eliminate the less dense cherries and aerobic fermentation begins in 16-hour tanks using a prepared inoculum. with the fermentations of the farm's previous harvests. The coffee mass is transferred to the greenhouse and placed on beds to dry for two days to drain most of the water and undergo a final phase of juice exchange. Finally, the drying process is completed with a two-day airing process in a silo.
