Description
Joyabaj: A municipality with a rich history and culture in Guatemala
Joyabaj is a municipality in Guatemala with a rich history and culture. Its name, according to the Popol Vuh, refers to the "place among stones" in the K'iche' language, and according to another version, it means "talcum stone." The predominant language in the municipality is K'iche', spoken by 88.61% of the population, followed by Spanish. The indigenous population also speaks languages such as Quiché and Cakchiquel.
In Joyabaj, ancient Mayan religious beliefs and practices have a strong presence and pre-Hispanic connections. The culture and folklore are highly valued by national and international tourists due to the uniqueness of the traditional costumes and traditions that characterize each municipality and are respected and valued as a great treasure.
The municipality is rich in valleys, mountains, and water sources, which generates a cool climate. This also affects the type of coffee grown in the area, and its quality depends on the soil and climate. The Joyabaj Wet Mill is centrally located and accessible to the services necessary for its operation. In its first year of operation, in 2021, it processed 5,000 quintals of parchment coffee from January to April and seeks to improve and expand its production capacity. It also seeks to provide technical advice and support to producer communities for high-yield organic crops and expand its production areas.
Coffee production process at the Joyabaj Wet Mill
Once the drying process is complete, the parchment coffee is stored for roasting and grinding. The roasting process is important because it contributes to the coffee's flavor and aroma. It is carried out in a specific coffee roaster. During the grinding process, the coffee is ground into a fine powder for preparation and consumption.
Once processing is complete, the coffee is ready to be packaged and shipped to buyers or stores. It's important to mention that the selection and grading process is key to obtaining a high-quality product, as defective beans can affect the final flavor and aroma of the coffee.
In short, coffee processing in Joyabaj involves several critical steps that are vital to obtaining a high-quality final product. These steps are: harvesting, collecting, and sorting the coffee beans, which are carried out by each producer's family members, followed by cleaning, fermentation, pulping, drying, roasting, and grinding. Controlling each step is important to ensure the quality of the final product.
