The environment
The farm is located at an altitude of 1,700 meters, where the microclimate and soils of the area enhance the sensory complexity. Fernando began working these lands in 2011, which were initially used for pasture and a few Caturra coffee plants. Years later, he incorporated Bourbon Rosado and perfected his work with honey and washed processes, achieving consistent coffees with their own distinct character.
Process
This batch from Villa Rubiela, Colombia, is a Pink Bourbon honey, made with selectively harvested ripe cherries, controlled aerobic fermentation, and canopied drying for over two weeks. The result is a cup with a fruity, enzymatic fragrance, revealing notes of citrus, strawberry, peach, and walnut. Its character is sweet and spicy, with a creamy body and medium acidity that provides balance and freshness.
