Origin
The coffee Satus – Colombia It is produced by Asosatus, an association of 60 coffee-growing families committed to producing differentiated coffees of exceptional quality. These families, passionate about innovation and purist techniques, have perfected their work to bring out the best in each lot. Their focus on understanding global trends and applying modern technologies is complemented by a deep respect for traditional methods. This balance allows them to offer coffees that stand out for both their authenticity and their technical excellence.
Process
The process behind Satus – Colombia is meticulous and detailed:
- Selective collection: Only perfectly ripe cherries are harvested, with financial incentives for the pickers who ensure this practice.
- Two-stage fermentation:
- First stage: 24 hours in sealed tanks with water, which promotes uniform fermentation.
- Second stage: After pulping, the cherries ferment for an additional 48 hours in sealed tanks, using the mucilage as a food source for the microorganisms.
- Traditional drying: It is carried out in a patio for two weeks, ensuring uniform drying that preserves its sensory characteristics.
- EP Preparation: With a 95% of the beans above the 15 mesh, the coffee moisture is 10.5% and its water activity is 0.59, which ensures stability and quality in the cup.
