This is a brewing device loved by both home and professional baristas.
The coffee makers Chemex They produce flavorful, clean cups of coffee, with sweet, balanced notes. For those who appreciate subtle, balanced coffees, Chemex is an excellent choice.
Tools you will need
- Chemex and filter
- Scales
- Gooseneck kettle
- Filtered or mineral water
- Medium/coarse ground coffee
Recipe
The grind should be medium, a bit coarser but very similar to a ceramic cone or electric filter coffee maker. We recommend starting with a 1:15 ratio; for 40 grams of coffee, you'll need 600 grams of water. From here, the steps to follow are as follows:
- Place the paper filter on top of the coffee maker and soak it with hot water to remove any foreign flavors and to warm the container.
- Pour the ground coffee into the central cone of the coffee maker so that it forms an even layer.
- Next, slowly pour hot water (around 92 degrees) into the center of the coffee, using about twice as much water as coffee (for example, 80 grams of water for 40 grams of coffee). Let the coffee "bloom" or release gases for 30-40 seconds.
- Continue pouring water slowly and in circular motions from the center outwards until you reach the desired amount.
- Once you've reached the desired amount of coffee, remove the top and pour the coffee directly into the cups. Enjoy!

Tips and adjustments
Chemex is great for experimenting and creating a profile that best suits your personal preferences.
To brew coffee in a Chemex, we recommend a 1:16 ratio as:
30g coffee: 500g water
36g coffee: 600g water
42g coffee: 700g water

If you prefer a less strong cup of coffee, try a 1:18 brewing ratio such as: 36g coffee: 650g water
If you prefer a stronger cup of coffee, try a 1:14 brewing ratio such as: 36g coffee: 500g water
Not only can you manipulate the coffee to water ratio as you wish, but you can also change the way the coffee is extracted by stirring during the brewing process or by changing the way you pour (speed, flow, pattern).
