The Rebirth
Alejandro is a second-generation coffee producer. He has been learning the trade hand-in-hand with his father for five years, who has instilled in him his love for the countryside. The Renacer farm project arose when the Arboleda family found the ideal piece of land (undeveloped for years) and purchased it so that Alejandro could find a prosperous future in coffee, starting from scratch and without the vices of traditional coffee farming. The organization and replanting of the land began in 2019 and is now bearing its first fruits. It is a project we hope to support for many years to come.

Collection and processing:
Manual harvesting of only ripe and overripe fruit between 18.5% and 21% °Brix. After harvesting, the cherries are washed to remove dirt and floated to separate the less dense cherries. Production batches of 60kg of coffee cherries are then prepared to maintain the stability of the fermentation process, which is then anaerobically fermented for 72 hours in GRAINPRO bags. To compensate for the young age of the trees, longer fermentation protocols were implemented, thus further strengthening the varietal's attributes.

Drying:
Dried in shaded canopies for 10 to 15 days depending on the weather, and finally left to stabilize for 45 days in the shade.
