Since 2022, a group of farmers from the region of Garut, Java, Indonesia, has worked closely with Sucafina to develop sustainable, high-quality coffee. Thanks to this partnership, they have implemented responsible agricultural practices that not only improve coffee quality, but also protect the environment and strengthen the local economy.
What is the Giling Basah Process?
He Giling Basah, or "wet milling," is a traditional processing method in Indonesia that significantly influences the coffee's profile. Unlike the conventional washed method, in Giling Basah the coffee is pulped and left to ferment for only a few hours before the mucilage is removed. The beans are then partially dried to a moisture level of 30-40 TP3T (instead of the 10-12 TP3T typical in other methods) and pulped again before continuing with the drying process.
This process speeds up production and gives the coffee unique characteristics: a intense body, a moderate acidity and one silky texture with nuances earthy and spicy, which combine with the fruity and chocolate notes of Garut coffee.
Commitment to Sustainability
The leadership of Pak Dede Komarudin, head of the farmers' group and coffee cherry processor, has been key in this development. Initially, Pak Dede started a small-scale washing station, sourcing cherries directly from registered farmers. Over time, the project has grown significantly.
In 2023, Sucafina Indonesia provided infrastructure and working capital support, which allowed for improved processing capacity and the efficiency of the Pak Dede washing station. This investment has been essential in ensuring higher-quality coffee and improving product traceability.
A Circular Ecosystem
In addition to coffee processing, Sucafina and Pak Dede have promoted initiatives that strengthen the sustainability of the crop. These include:
- Sustainability programs for farmers, focused on the development of better agronomic practices and the optimization of natural resources.
- A coffee nursery, where seedlings of selected varieties are grown to improve crop productivity and resilience.
- A composting plant, which reuses coffee pulp waste, transforming it into organic fertilizer to enrich the soil and reduce waste.
