It is a coffee that comes from the SOUTHERN NATIONS, NATIONALITIES AND PEOPLES? region in southern Ethiopia.

Kambata is a very beautiful and almost remote area that is known because almost all of Ethiopia’s gold is located there, unfortunately this causes local tensions between miners and farmers.

It is purely Forest Coffee, that is, the coffee grows wild in the forest and remains intact over time. Although there is no organic certification on this coffee we could talk about it as an organic coffee just like any other Ethiopian coffee and there is not much to justify beyond the fact that it is the simple story of a poor country.
Traceability remains a problem to know more about the origin due to marketing through the ECX agency. But we can be sure that it is a Kambata Gr.2 and therefore has its flavor and character.
We also know that it comes from the washing station owned by Samuel Paulos who sold this coffee to the ECX, where it was
auctioned and purchased by MOPLACO for Xorxios.
Moplaco buys this coffee as dry drupe and in its facilities it is threshed, cleaned and classified.
At the head of the company is Heleanna Georgalis since 2008, she is immersed in the third wave of coffee and is concerned first and foremost with the quality of the coffee she exports.
She continues with her father’s legacy, and affirms that she is passionate about this world where she herself can
experimenting with processes and having fun while being able to test the results.
It is important to highlight that the uniqueness of Ethiopian coffees resides in the non-genetic modification?
of the coffee plants.
In Ethiopia there are thousands of unexplored varieties and those that are known remain intact, and this is what Heleanna emphasizes every time we bring up the subject.
Ethiopia is the cradle, the varieties are specific to each zone, scientists have recognized 37 varieties of which 34 are natural.
Many times we find that Ethiopian coffee is of the Heirloom variety and what it means is that it is an ancient root, it does not define the variety itself, but it is generic.
The variety bears the name of the zone in which it grows and where it has been growing for years, it must have the characteristic flavor of the zone, that is to say that it has a specific cup profile.

Although it is a coffee that retains the generic characteristics of Ethiopian coffees, a very different cup profile is obtained as a result of its natural processing.
Hence its complexity when it comes to defining it.

Kambata is southwest of Addis and was sold as Sidamo until recently, the soils where this coffee grows are volcanic.
Now it is exported as Kambata, i.e. it has its own denomination.
